1 cup fresh sweet corn kernels (about 2 ears of corn)

1 medium zucchini, grated

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/4 cup grated Parmesan cheese

2 green onions, finely chopped

1 clove garlic, minced

1 tsp baking powder

1/2 tsp smoked paprika

1/4 tsp salt

1/4 tsp black pepper

2 tbsp fresh parsley, chopped (optional)

1/4 cup vegetable oil (for frying)

Sour cream or yogurt (for serving)

Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. Set aside.

    Mix the Batter: In a large mixing bowl, combine the sweet corn kernels, grated zucchini, flour, cornmeal, eggs, Parmesan cheese, green onions, minced garlic, baking powder, smoked paprika, salt, black pepper, and parsley (if using). Stir until well combined. The mixture should be thick and hold together.

      Heat the Oil: In a large skillet, heat the vegetable oil over medium heat until shimmering. You can test the oil's readiness by dropping a small spoonful of the fritter mixture in; it should sizzle immediately.
