Ingredients

1 cup rolled oats

1/2 cup chia seeds

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/2 cup unsweetened cocoa powder

1/2 cup dark chocolate chips (or dairy-free chocolate chips for a vegan option)

1/4 cup shredded coconut (optional)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

Instructions

Prepare the Baking Dish: Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, chia seeds, cocoa powder, and sea salt. Stir the dry ingredients together until well mixed.

Blend Wet Ingredients: In a separate bowl, mix together almond butter, honey (or maple syrup), and vanilla extract until smooth and creamy.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Stir well, ensuring that everything is thoroughly combined. The mixture should be thick and sticky.

Add Chocolate Chips & Coconut: Gently fold in the dark chocolate chips and shredded coconut, if using, until evenly distributed.

Press into Dish: Transfer the mixture into the prepared baking dish. Press down firmly with your hands or a spatula to create an even layer. The bars should be compact.

Chill and Set: Place the dish in the refrigerator for at least 2 hours, or until the mixture is firm and set.

Cut Bars: Once set, lift the bars out of the dish using the parchment paper overhang. Cut into squares or rectangles, depending on your preferred serving size.

Store: Keep the energy bars in an airtight container in the refrigerator for up to a week or freeze for longer storage.
