4 flour tortillas

2 medium apples (like Granny Smith or Honeycrisp), peeled and thinly sliced

1 tablespoon lemon juice

1 teaspoon ground cinnamon

2 tablespoons brown sugar

1/2 cup shredded sharp cheddar cheese

1/4 cup raisins or dried cranberries (optional)

2 tablespoons butter

Honey or maple syrup (for drizzling)

Powdered sugar (for dusting, optional)

Prepare the Apples: In a mixing bowl, combine the thinly sliced apples with lemon juice, cinnamon, and brown sugar. Toss until the apples are well coated. If using, add raisins or dried cranberries and mix them in.

    Assemble the Quesadillas: Heat a large skillet over medium heat and add 1 tablespoon of butter. Once melted, place one tortilla in the skillet. On one half of the tortilla, layer a generous amount of the apple mixture followed by a handful of shredded cheddar cheese. Fold the tortilla in half to cover the filling.

      Cook the Quesadilla: Cook the quesadilla for about 3-4 minutes on one side until golden brown and the cheese begins to melt. Carefully flip it over and cook for another 2-3 minutes until the other side is also golden and crispy.

        Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortillas, using the rest of the butter as needed and keeping the quesadillas warm in a low oven if desired.

          Cut and Serve: Once all the quesadillas are cooked, use a sharp knife or pizza cutter to slice them into triangles. Arrange them on a serving platter, drizzle with honey or maple syrup, and dust with powdered sugar if desired. Serve warm and enjoy!
