2 cups almond milk (or any milk of choice)

1/4 cup Greek yogurt (or dairy-free yogurt)

1 teaspoon vanilla extract

1/4 cup chopped walnuts or pecans (optional)

Pinch of salt

Fresh apple slices and extra cinnamon for topping

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or olive oil.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, brown sugar (or maple syrup), ground cinnamon, nutmeg, and salt. Stir well to combine all the dry ingredients.

      Prepare Apples: In a separate bowl, toss the diced apples with a teaspoon of cinnamon. This enhances their flavor and keeps them nice and sweet.

        Combine Wet Ingredients: In another bowl, whisk together the almond milk, Greek yogurt, and vanilla extract until fully combined and smooth.
