Ingredients

1 medium head of cauliflower, cut into florets

3 tablespoons olive oil

2 tablespoons maple syrup

1 tablespoon soy sauce (or tamari for gluten-free)

1 teaspoon sriracha (adjust to taste)

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional for extra heat)

Salt and pepper, to taste

2 tablespoons sesame seeds (for garnish)

Fresh cilantro, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Cauliflower: In a large mixing bowl, combine all the cauliflower florets with olive oil, maple syrup, soy sauce, sriracha, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Toss well to ensure all the florets are coated evenly.

Arrange on Baking Sheet: Spread the coated cauliflower florets in a single layer on the prepared baking sheet. Make sure they are not overcrowded to achieve the best roasting results.

Bake: Roast the cauliflower in the preheated oven for about 25-30 minutes, or until golden brown and crispy, turning them halfway through for even cooking.

Garnish and Serve: Once baked, remove the cauliflower from the oven and let it cool for a minute. Transfer to a serving dish, sprinkle with sesame seeds and fresh cilantro, and serve warm.

Enjoy: This Sweet and Spicy Baked Cauliflower can be enjoyed as a flavorful side dish, a snack, or even as a main vegan entrée when served over quinoa or rice!
