Sweet and Sour Meatballs

For the Meatballs:

1 lb ground beef (or turkey)

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

For the Sweet and Sour Sauce:

1 cup pineapple juice

1/2 cup white vinegar

1/2 cup brown sugar

1/4 cup soy sauce

1 tablespoon cornstarch (mixed with 2 tablespoons water)

1 red bell pepper, diced

1 cup pineapple chunks (fresh or canned)

1/2 cup chopped green onions, for garnish

Sesame seeds, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Meatball Mixture: In a large bowl, combine the ground beef or turkey, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, onion powder, salt, and black pepper. Mix until well combined.

      Shape the Meatballs: Using your hands, shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.

        Bake the Meatballs: Bake the meatballs in the preheated oven for 18-20 minutes or until they are cooked through and golden brown.

          Make the Sweet and Sour Sauce: While the meatballs are baking, prepare the sauce. In a medium saucepan over medium heat, combine the pineapple juice, white vinegar, brown sugar, and soy sauce. Bring to a simmer.

            Thicken the Sauce: Once the mixture is simmering, add the cornstarch slurry (cornstarch mixed with water) and stir until the sauce thickens, about 2-3 minutes.

              Add Vegetables: Stir in the diced bell pepper and pineapple chunks, allowing cooking for an additional 2-3 minutes until the bell pepper is slightly tender.
