For the Carrot Fritters:

3 large carrots, grated

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup cornmeal

1/2 cup shredded cheddar cheese (optional for added flavor)

1/4 cup green onions, finely chopped

1 clove garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg

2 tablespoons fresh parsley, chopped

Olive oil, for frying

For the Tacos:

8 small corn tortillas

1 avocado, sliced

1 cup arugula or spinach

1/2 cup sour cream or Greek yogurt

1 lime, cut into wedges

For the Smoky Chipotle Sauce (optional):

1/2 cup mayonnaise

1 tablespoon chipotle in adobo sauce, minced

1 teaspoon lime juice

Salt, to taste

Instructions
 

Prepare the Fritters: In a large mixing bowl, combine grated carrots, flour, cornmeal, cheddar cheese (if using), green onions, garlic, smoked paprika, cumin, salt, black pepper, egg, and parsley. Mix until everything is well combined and the mixture is slightly sticky.

    Form Fritters: Heat a generous drizzle of olive oil in a large skillet over medium heat. Once hot, scoop about 2 tablespoons of the carrot mixture per fritter and flatten it slightly with the back of a spatula. Cook the fritters in batches, about 4-5 minutes on each side, or until they are golden brown and cooked through. Remove them to a paper towel-lined plate to drain excess oil.

      Prepare Smoky Chipotle Sauce (optional): In a small bowl, whisk together mayonnaise, chipotle, lime juice, and salt until smooth. Adjust seasoning to taste.

        Warm Tortillas: In a separate skillet, warm the corn tortillas for about 30 seconds on each side until they are pliable.

          Assemble Tacos: Place a few fritters on each tortilla, followed by avocado slices, arugula or spinach, and a drizzle of the smoky chipotle sauce (if using). Squeeze fresh lime juice over the top.
