Summer Salsa Pizza Wedges

Ingredients
  

1 large whole wheat pita or flatbread

1 cup fresh cherry tomatoes, diced

1/2 cup red onion, finely chopped

1/2 cup bell pepper (any color), diced

1 jalapeño, seeded and minced (optional, for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 teaspoon cumin

Salt and pepper to taste

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

Optional toppings: avocado slices, sour cream, or Greek yogurt for serving

Instructions
 

Prepare the Salsa: In a medium bowl, combine the diced cherry tomatoes, red onion, bell pepper, jalapeño (if using), and cilantro. Squeeze the lime juice over the mixture, add cumin, and season with salt and pepper. Mix well and set aside to let the flavors meld.

    Preheat Oven: Preheat your oven to 400°F (200°C).

      Prepare the Base: Place the whole wheat pita or flatbread on a baking sheet lined with parchment paper. If your pita is thick, gently flatten it with a rolling pin to ensure even cooking.

        Add Salsa & Cheese: Spread a generous layer of the salsa mixture over the pita, leaving a small border around the edges. Sprinkle the shredded mozzarella evenly on top of the salsa, followed by the crumbled feta cheese.

          Bake: Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the cheese is bubbly and golden, and the edges of the pita are crispy.

            Slice & Serve: Remove the pizza from the oven and let it cool for a couple of minutes. Use a pizza cutter to slice it into wedges. If desired, top with fresh avocado slices and a dollop of sour cream or Greek yogurt.

              Garnish: Serve immediately while hot, garnished with extra cilantro and lime wedges on the side for a fresh pop of flavor.
