4 large ripe tomatoes

8 oz fresh burrata cheese

1 cup arugula, roughly chopped

½ cup fresh basil leaves, chopped

¼ cup cherry tomatoes, diced

2 tablespoons pine nuts, toasted

2 tablespoons balsamic glaze

1 tablespoon extra-virgin olive oil

Salt and pepper, to taste

Instructions
 

Prepare the Tomatoes: Slice the tops off the large ripe tomatoes and carefully scoop out the insides using a teaspoon or melon baller, leaving a thin wall of tomato for structure. Set aside the scooped-out insides for later use.

    Mix the Filling: In a mixing bowl, combine the burrata cheese, chopped arugula, chopped basil, diced cherry tomatoes, and toasted pine nuts. Gently break apart the burrata with a fork and mix until combined. Season with salt and pepper to taste.

      Stuff the Tomatoes: Generously fill each hollowed-out tomato with the burrata and salad mixture, pressing down gently to pack it in.

        Drizzle and Garnish: Arrange the stuffed tomatoes on a serving platter. Drizzle each with olive oil and balsamic glaze for added flavor.
