Ingredients

8 slices of thick-cut brioche or challah bread

4 oz cream cheese, softened

1/2 cup fresh strawberries, hulled and sliced

1/2 cup fresh blueberries

1/2 cup fresh raspberries

2 tbsp honey or maple syrup (plus extra for serving)

3 large eggs

1 cup whole milk

1 tsp vanilla extract

1 tsp ground cinnamon

1/4 tsp salt

2 tbsp unsalted butter (for cooking)

Powdered sugar (for dusting)

Instructions

Prepare the berry filling: In a mixing bowl, combine the softened cream cheese, honey or maple syrup, and a pinch of salt. Mix well until smooth. Gently fold in the fresh strawberries, blueberries, and raspberries. Set aside.

Assemble the French toast: Take four slices of brioche or challah bread. Spread a generous layer of the berry-cream cheese mixture on each slice. Top each slice with another piece of bread to create four stuffed sandwiches.

Make the custard mixture: In a large bowl, whisk together the eggs, whole milk, vanilla extract, ground cinnamon, and a pinch of salt until well combined.

Soak the stuffed sandwiches: Carefully dip each stuffed sandwich into the egg mixture, allowing it to soak for about 30 seconds on each side. Ensure that both sides are well-coated, but not overly soggy.

Cook the French toast: In a large skillet, melt 1 tablespoon of unsalted butter over medium heat. Once the butter is bubbling, place two stuffed sandwiches in the skillet. Cook each side for about 3-4 minutes, or until golden brown. Repeat the process with the remaining butter and stuffed sandwiches.

Serve: Slice the stuffed French toast in half and arrange on plates. Drizzle with extra honey or maple syrup, and dust with powdered sugar. Garnish with any leftover berries for a vibrant finish.

Enjoy: Serve the stuffed French toast warm with your choice of toppings like whipped cream or additional syrup.
