Stuffed Bell Peppers with Sausage and Rice

4 large bell peppers (any color)

1 lb Italian sausage (mild or spicy, based on preference)

1 cup cooked rice (white, brown, or jasmine)

1 cup onion, chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 cup shredded mozzarella cheese (plus extra for topping)

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

Fresh parsley or basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prep the Peppers: Cut the tops off the bell peppers and remove seeds and membranes. Rinse them under cold water and set aside to drain.

      Cook the Sausage: In a large skillet over medium heat, add the Italian sausage. Use a wooden spoon to break the sausage into smaller pieces as it cooks. Brown the sausage evenly for about 5-7 minutes until fully cooked. Drain excess fat if necessary.

        Sauté Vegetables: Add the chopped onion and minced garlic to the skillet with the sausage. Cook for an additional 3-4 minutes until the onions are translucent and fragrant.

          Combine Filling: Stir in the cooked rice, diced tomatoes (with their juices), Italian seasoning, salt, and black pepper. Mix well and cook for another couple of minutes, allowing all the flavors to meld together.

            Fill Peppers: Carefully spoon the sausage and rice mixture into each bell pepper, packing it down gently. Place the stuffed peppers upright in a baking dish.

              Add Cheese: Sprinkle the tops of the stuffed peppers with shredded mozzarella cheese.

                Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and slightly golden.

                  Garnish and Serve: Remove the stuffed peppers from the oven and let them cool slightly. Garnish with fresh parsley or basil before serving.
