Ingredients

2 ripe avocados

1 can (5 oz) of premium tuna in olive oil, drained

1/4 cup diced red onion

1/4 cup diced celery

1/4 cup diced red bell pepper

1/4 cup sweet corn (canned or fresh)

2 tablespoons mayonnaise (or Greek yogurt for a lighter option)

1 tablespoon lime juice

1 tablespoon chopped fresh cilantro (or parsley)

Salt and pepper to taste

Optional: Sliced jalapeños for a spicy kick

Instructions

Prepare the Avocados: Cut the avocados in half lengthwise, remove the pits, and gently scoop a little bit of the flesh from the center to create more space for the filling. Keep the scooped avocado to mix into the tuna for added creaminess.

Make the Tuna Filling: In a mixing bowl, combine the drained tuna, diced red onion, diced celery, diced red bell pepper, and sweet corn. Add in the avocado flesh you scooped out earlier.

Add the Creaminess: Stir in the mayonnaise or Greek yogurt, lime juice, and chopped cilantro. Mix everything together until well combined. Season with salt and pepper to taste and add jalapeños if you prefer some heat.

Stuff the Avocados: Divide the tuna mixture evenly among the avocado halves, generously packing the mixture in.

Serve: Place the stuffed avocados on a serving platter. Garnish with extra cilantro or lime wedges for a fresh touch. Serve immediately and enjoy your tropical twist on a classic!
