8 oz cream cheese, softened

1/2 cup powdered sugar

1/2 cup heavy cream

1 tbsp lemon juice

1 tsp cornstarch (optional, for thickening)

For the roll:

1 package (8 oz) refrigerated crescent roll dough

1/2 cup crushed graham crackers

2 tbsp unsalted butter, melted

Whipped cream

Extra fresh strawberries

Instructions
 

Prepare the Strawberry Filling:

    - In a medium bowl, combine sliced strawberries, granulated sugar, lemon juice, and cornstarch. Toss gently, then let it sit for 15-20 minutes to allow the sugar to draw out the juices.

      Make the Cheesecake Filling:

        - In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.

          - In a separate bowl, whip the heavy cream until it forms stiff peaks, then gently fold it into the cream cheese mixture until fully combined. Set aside.

            Prepare the Crescent Roll Dough:

              - Preheat your oven to 375°F (190°C).

                - Unroll the crescent roll dough onto a lightly floured surface, and press the seams together to form a rectangle.

                  Assemble the Rolls:

                    - Brush the melted butter over the crescent roll dough.

                      - Evenly spread the cheesecake filling onto the dough with a spatula, leaving a small border around the edges.
