Ingredients

2 cups fresh strawberries, hulled and quartered

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 cup water

1/2 cup granulated sugar (adjust based on sweetness of strawberries)

Zest of 1 lemon

A pinch of salt

Optional: Fresh mint leaves for garnish

Instructions

Make the Strawberry Puree:

    - In a blender, combine the quartered strawberries and 1/4 cup of the sugar. Blend until smooth. You can leave some small chunks for added texture, if desired.

      Prepare the Lemonade Mixture:

        - In a large bowl, mix the freshly squeezed lemon juice, water, remaining 1/4 cup sugar, lemon zest, and a pinch of salt. Stir well until the sugar is fully dissolved.

          Combine the Mixtures:

            - Gently fold the strawberry puree into the lemonade mixture. Stir to combine, ensuring the strawberry is evenly distributed throughout.

              Fill the Molds:

                - Pour the combined mixture into popsicle molds, filling them to about 3/4 full to allow for expansion as they freeze.

                  Add Sticks:

                    - Insert popsicle sticks into the molds. If you are using a silicone mold, you may need to freeze for about 30 minutes before inserting sticks to ensure they stand upright.

                      Freeze:

                        - Freeze the molds for at least 4-6 hours or until completely solid. For best results, leave them overnight.

                          Unmold the Popsicles:

                            - To release the popsicles, run warm water over the outside of the mold for a few seconds before gently pulling them out. Enjoy immediately!

                              Garnish (Optional):

                                - For a fresh touch, serve with a sprig of mint or extra sliced strawberries on top.
