Strawberry Lemonade Bars

For the Crust:

1 ½ cups all-purpose flour

½ cup powdered sugar

½ teaspoon salt

½ cup unsalted butter, melted

For the Filling:

1 cup fresh strawberries, pureed (about 8-10 medium strawberries)

1 cup granulated sugar

2 large eggs

Zest of 1 lemon

½ cup fresh lemon juice (about 2 lemons)

½ cup all-purpose flour

1 teaspoon baking powder

Pinch of salt

For the Topping:

2 tablespoons powdered sugar (for dusting)

Optional: Fresh strawberry slices and lemon wedges for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan and line it with parchment paper, leaving an overhang on the sides for easy removal.

    Make the Crust: In a bowl, whisk together 1 ½ cups of flour, ½ cup of powdered sugar, and ½ teaspoon of salt. Stir in the melted butter until the mixture resembles wet sand. Press the mixture firmly into the bottom of the prepared pan. Bake for 15 minutes, or until lightly golden. Remove from the oven and let cool slightly.

      Prepare the Filling: In a separate bowl, combine 1 cup of strawberry puree, 1 cup of granulated sugar, and the eggs. Whisk together until smooth. Add in the lemon zest and lemon juice, mixing until well combined.

        Finish the Filling: Sift in ½ cup of flour, 1 teaspoon of baking powder, and a pinch of salt to the strawberry mixture. Gently fold until just combined, being careful not to overmix.

          Pour the Filling: Pour the strawberry lemon filling over the pre-baked crust, spreading it evenly.

            Bake: Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set but still slightly jiggly in the center.

              Cool & Slice: Allow the bars to cool in the pan at room temperature for 1 hour. Once cooled, refrigerate for at least 2 hours for easier slicing.

                Serve: Lift the bars out of the pan using the parchment overhang. Use a sharp knife to cut into squares or rectangles. Dust with powdered sugar just before serving, and optionally garnish with fresh strawberry slices and lemon wedges.
