For the Crullers:

1 cup water

1/2 cup unsalted butter, cubed

1/4 teaspoon salt

1 cup all-purpose flour

4 large eggs

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

For the Strawberry Glaze:

1 cup powdered sugar

2-3 tablespoons fresh strawberry puree (from about 1 cup strawberries)

1 teaspoon vanilla extract

A splash of milk (as needed for consistency)

Fresh strawberries for garnish (optional)

Instructions
 

Prepare the Dough:

    In a medium saucepan, combine water, cubed butter, and salt. Bring to a boil over medium-high heat. Once boiling, remove from heat and stir in the flour until well combined and a smooth dough forms.

      Incorporate Eggs:

        Let the mixture cool for about 5 minutes. Then, add eggs one at a time, mixing well after each addition. Stir in the vanilla extract until the dough is smooth and glossy.

          Pipe the Crullers:

            Transfer the dough into a large piping bag fitted with a star tip. On a baking sheet lined with parchment paper, pipe 4-inch rings (piping two overlapping loops to form an oval shape) to create the cruller shape.

              Heat the Oil:

                In a deep frying pan or pot, heat oil over medium heat to 350°F (175°C). Make sure there’s enough oil for the crullers to float while frying.

                  Fry the Crullers:

                    Carefully drop in a few crullers at a time, avoiding overcrowding. Fry for about 3-4 minutes on each side, or until golden brown. Remove with a slotted spoon and drain on paper towels.

                      Make the Strawberry Glaze:

                        In a mixing bowl, whisk together the powdered sugar, fresh strawberry puree, vanilla extract, and a splash of milk. Adjust the milk as necessary to achieve a pourable yet thick consistency.

                          Glaze the Crullers:

                            Once crullers are cool, dip the tops into the strawberry glaze or drizzle the glaze over the crullers. Let excess glaze drip off.

                              Garnish and Serve:

                                If desired, garnish with fresh strawberries on top of the glaze. Serve immediately or allow to set for a few minutes before enjoying.
