Ingredients

4 boneless, skinless chicken breasts

1 cup fresh strawberries, hulled and halved

1/4 cup balsamic vinegar

2 tablespoons honey

2 tablespoons soy sauce

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/4 teaspoon black pepper

Salt to taste

Fresh basil leaves for garnish (optional)

Instructions

Marinate the Chicken: In a medium bowl, whisk together balsamic vinegar, honey, soy sauce, olive oil, minced garlic, grated ginger, black pepper, and salt. Reserve 1/4 cup of the marinade for the glaze. Add the chicken breasts to the bowl and coat them well. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

Prepare the Strawberry Sauce: In a small saucepan over medium heat, combine the halved strawberries and the reserved marinade. Cook for about 5-7 minutes, stirring occasionally, until the strawberries break down and the mixture thickens. Remove from heat and set aside.

Cook the Chicken: Preheat your grill or a skillet over medium-high heat. Remove chicken from the marinade and discard the used marinade. Grill or sear the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is golden brown.

Glaze the Chicken: In the last minute of cooking, brush the cooked chicken with the strawberry sauce to create a glaze. Allow it to caramelize slightly on the heat.

Serve: Once cooked, let the chicken rest for 5 minutes. Slice the chicken and drizzle with additional strawberry sauce if desired. Garnish with fresh basil leaves for an aromatic touch.

Enjoy: Serve this dish alongside a fresh salad or your favorite side to create a delightful meal.
