1 cup raw cashews or almonds

1 cup shredded unsweetened coconut

1/2 cup freeze-dried strawberries (or fresh, if unavailable)

2 tablespoons chia seeds

1 tablespoon vanilla extract

Pinch of salt

Optional: 2 tablespoons maple syrup or honey for extra sweetness

Prepare Ingredients: If using fresh strawberries, wash and chop them finely. If using freeze-dried strawberries, crush them slightly into smaller pieces.

    Blend Nuts: In a food processor, pulse the cashews or almonds until they form a coarse meal (about 20-30 seconds). Be careful not to over-process into butter.

      Add Dates: Add the pitted dates into the food processor. Blend until the mixture becomes sticky and starts to clump together.

        Mix in Other Ingredients: Add the shredded coconut, freeze-dried strawberries, chia seeds, vanilla extract, and salt. If you prefer a sweeter energy ball, include the maple syrup or honey. Pulse until all ingredients are combined and form a sticky mixture.

          Form Balls: Once the mixture is well combined, use your hands to scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used. You should yield about 15-20 balls.

            Chill: Place the energy balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm them up.
