1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1/4 cup soy sauce

1/4 cup honey

2 tablespoons rice vinegar

2 tablespoons grated fresh ginger

2 cloves garlic, minced

1 tablespoon sesame oil

1 tablespoon cornstarch

2 tablespoons water

1 tablespoon sesame seeds (for garnish)

3 green onions, chopped (for garnish)

Cooked jasmine rice (for serving) – optional

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil. Add the chicken pieces and coat them evenly. Cover and marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

    Prepare the Sauce: After marinating, remove the chicken from the fridge. In a small bowl, mix cornstarch and water until smooth. Add this mixture to the remaining marinade in a small saucepan. Cook over medium heat, stirring, until it thickens (about 3-5 minutes). Remove from heat and set aside.

      Cook the Chicken: In a large skillet or frying pan, heat a drizzle of oil over medium-high heat. Once the oil is hot, add the marinated chicken pieces (reserve the marinade for the sauce). Cook the chicken for about 5-7 minutes or until golden brown and cooked through, stirring frequently.

        Glaze the Chicken: Pour the prepared teriyaki sauce over the cooked chicken in the skillet. Toss the chicken to coat it evenly in the sauce. Cook for another 2-3 minutes, allowing the sauce to become sticky and cling to the chicken.

          Serve: Remove the skillet from heat. Transfer the sticky teriyaki chicken bites to a serving platter. Garnish with sesame seeds and chopped green onions. Serve hot over cooked jasmine rice if desired.
