Sticky Sriracha Honey Cauliflower

1 medium head of cauliflower, cut into florets

1/2 cup all-purpose flour (or gluten-free flour)

1/2 cup cornstarch

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup cold water

2 tablespoons vegetable oil (for frying)

For the Sauce:

1/4 cup honey

2 tablespoons Sriracha (adjust to taste)

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon minced fresh ginger

For Garnish:

Sesame seeds

Chopped green onions

Fresh cilantro (optional)

Prepare the Cauliflower: In a large bowl, combine the flour, cornstarch, garlic powder, onion powder, salt, and black pepper. Gradually whisk in the cold water until the mixture is smooth. Add the cauliflower florets, ensuring they are evenly coated with the batter.

    Heat the Oil: In a large skillet or wok, heat vegetable oil over medium-high heat. You'll need enough oil for shallow frying. To test if the oil is ready, drop a small amount of batter into the oil; it should immediately sizzle.

      Fry the Cauliflower: Carefully add the battered cauliflower florets to the hot oil in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and crispy, turning occasionally for even color. Once cooked, transfer them to a paper towel-lined plate to drain excess oil.
