1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1/4 cup cornstarch

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon vegetable oil (for frying)

For the Sticky Sauce:

1/4 cup soy sauce (low sodium recommended)

1/4 cup honey

2 tablespoons sesame oil

2 tablespoons rice vinegar

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame seeds, toasted

1/4 teaspoon red pepper flakes (optional)

For the Noodle Bowl:

8 oz (225g) rice noodles or soba noodles

1 cup snap peas, trimmed

1 red bell pepper, thinly sliced

1 carrot, julienned

1 green onion, sliced

1/4 cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Prep the Chicken: In a mixing bowl, combine the cornstarch, salt, and pepper. Toss the chicken pieces in the mixture until well coated.

    Fry the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the coated chicken pieces and cook for about 5-7 minutes, or until golden brown and fully cooked. Remove the chicken from the skillet and set aside.
