Sticky BBQ Ribs with Peach Bourbon Glaze

For the Ribs:

2 racks of baby back ribs

2 tablespoons smoked paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon brown sugar

1 tablespoon salt

1 teaspoon black pepper

1 teaspoon cayenne pepper (optional for heat)

For the Peach Bourbon Glaze:

1 cup fresh peaches, peeled and diced (or use canned peaches, drained)

½ cup bourbon

½ cup ketchup

¼ cup apple cider vinegar

¼ cup brown sugar

1 tablespoon soy sauce

1 teaspoon Dijon mustard

½ teaspoon cinnamon

Salt and pepper to taste

Instructions
 

Prepare the Ribs:

    - Preheat your oven to 300°F (150°C).

      - Remove the membrane from the back of the ribs for tenderness.

        - In a bowl, mix together smoked paprika, garlic powder, onion powder, brown sugar, salt, black pepper, and cayenne pepper.

          - Rub the spice mix generously all over the ribs, ensuring they are well coated.

            Bake the Ribs:

              - Place the ribs on a baking sheet lined with aluminum foil. Cover tightly with another layer of foil.

                - Bake in the preheated oven for 2.5 to 3 hours, until tender. For best results, check at the 2.5-hour mark.

                  Make the Peach Bourbon Glaze:

                    - While the ribs are baking, prepare the glaze. In a saucepan over medium heat, combine diced peaches, bourbon, ketchup, apple cider vinegar, brown sugar, soy sauce, Dijon mustard, cinnamon, and a pinch of salt and pepper.

                      - Bring the mixture to a gentle simmer. Reduce heat and simmer for about 15-20 minutes, until the peaches have broken down and the glaze thickens slightly. Stir occasionally to prevent burning.

                        - Remove from heat and blend if you prefer a smooth glaze.

                          Glaze the Ribs:

                            - Once the ribs are done in the oven, remove them and increase the oven temperature to 400°F (200°C).

                              - Brush a generous amount of the Peach Bourbon Glaze over both sides of the ribs.

                                - Place the ribs back in the oven uncovered and bake for an additional 15-20 minutes, basting with the glaze every 5 minutes, until caramelized and sticky.

                                  Serve:

                                    - Remove ribs from the oven and let them rest for about 10 minutes before slicing.

                                      - Serve with extra Peach Bourbon Glaze on the side.
