For the Meatballs:

1 lb ground beef (or turkey)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

3/4 cup BBQ sauce (plus more for serving)

For the Mashed Potato Muffins:

2 cups mashed potatoes (preferably made from scratch)

1/2 cup shredded cheddar cheese

1/4 cup milk

1/4 cup sour cream

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

1/4 cup chopped chives or green onions (for garnish)

For Topping:

Extra BBQ sauce (for drizzling)

Chopped parsley (for garnish)

Instructions
 

Preheat the Oven:

    Preheat your oven to 375°F (190°C) and grease a standard muffin tin or line it with muffin liners to prevent sticking.

      Prepare the Meatballs:

        In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, smoked paprika, salt, and black pepper. Mix until well combined.

          Shape the Meatballs:

            Form the mixture into small meatballs, about 1-inch in diameter. You should have around 12-15 meatballs.

              Bake the Meatballs:

                Place the meatballs on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes, or until browned and cooked through. During the last few minutes, brush or toss the meatballs with BBQ sauce to glaze them.

                  Prepare the Mashed Potatoes:

                    In a mixing bowl, combine the warm mashed potatoes, shredded cheddar cheese, milk, sour cream, garlic powder, onion powder, salt, and pepper. Mix until smooth and creamy.

                      Assemble the Muffins:

                        Spoon a layer of mashed potato mixture into each muffin cup (about halfway full), followed by a meatball on top of the mashed potatoes. Cover the meatball with more mashed potatoes until the muffin cups are nearly full.

                          Bake the Muffins:

                            Bake in the oven for an additional 20-25 minutes, until the tops are lightly golden and the muffins are heated through.

                              Serve:

                                Remove the muffins from the oven and let them cool slightly. Drizzle with additional BBQ sauce, sprinkle with chopped chives or green onions, and garnish with parsley before serving.
