Steak and Creamy Pasta

For the Steak:

2 ribeye steaks (1-inch thick)

2 tablespoons olive oil

Salt and freshly cracked black pepper

2 cloves garlic, smashed

2 sprigs fresh rosemary

For the Creamy Pasta:

8 oz fettuccine or pasta of choice

2 tablespoons butter

3 cloves garlic, minced

1 cup heavy cream

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

1 cup baby spinach

Zest of 1 lemon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Steak:

    - Remove the steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking.

      - Heat the olive oil in a large skillet over medium-high heat. Season both sides of the steaks with salt and pepper.

        - Once the oil is hot, add the steaks, smashed garlic, and rosemary sprigs. Sear the steaks for about 4-5 minutes on one side, then flip and cook for an additional 3-4 minutes for medium-rare, or until your desired doneness is reached.

          - Remove the steaks from the skillet, tent them with foil, and let them rest while you prepare the pasta.

            Cook the Pasta:

              - In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve about ½ cup of pasta water, then drain and set aside.

                Make the Creamy Sauce:

                  - In the same skillet used for the steak, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

                    - Pour in the heavy cream, then stir in the Italian seasoning and bring to a gentle simmer. Let it cook for 2-3 minutes to thicken slightly.

                      - Add the Parmesan cheese, and whisk until melted and well combined. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

                        - Stir in the baby spinach and lemon zest, allowing it to wilt for about 1 minute. Season with salt and pepper to taste.

                          Combine Pasta and Sauce:

                            - Add the drained pasta to the creamy sauce in the skillet, tossing to coat evenly. If needed, add a little more of the reserved pasta water to help the sauce cling to the pasta.

                              Serve:

                                - Slice the rested steak against the grain into thick strips. Plate the creamy pasta and top it with the steak slices.

                                  - Garnish with chopped parsley for a fresh touch and serve immediately.
