For the Chicken Marinade:

1 lb boneless, skinless chicken thighs

3 tablespoons Sriracha sauce

Juice of 2 limes

2 tablespoons honey

2 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon black pepper

For the Slaw:

2 cups green cabbage, finely shredded

1 cup carrots, julienned

1/4 cup red onion, thinly sliced

1/3 cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon sugar

Salt and pepper to taste

For the Sliders:

8 small slider buns

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Marinade: In a bowl, whisk together Sriracha, lime juice, honey, minced garlic, cumin, salt, and pepper. Add the chicken thighs to the marinade and coat thoroughly. Cover and marinate in the refrigerator for at least 30 minutes (up to overnight for best flavor).

    Make the Slaw: In a large bowl, combine the shredded cabbage, carrots, and red onion. In a separate small bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper. Pour the dressing over the vegetables and toss to coat evenly. Set aside to let the flavors meld.

      Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for 5-7 minutes per side or until fully cooked (internal temperature should reach 165°F or 75°C). Remove from heat and let rest for a few minutes before slicing.
