Sriracha Honey Chicken Waffle Bites

For the Chicken:

1 lb boneless chicken tenders

1/2 cup all-purpose flour

1/2 cup breadcrumbs (preferably panko for extra crunch)

1 large egg

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp paprika

Oil for frying

For the Sriracha Honey Sauce:

1/4 cup honey

2 tbsp Sriracha (adjust to taste)

1 tbsp soy sauce

1 tsp rice vinegar

1 tsp sesame oil

1 clove garlic, minced

For the Waffles:

2 cups all-purpose flour

2 tbsp sugar

1 tbsp baking powder

1/2 tsp salt

2 large eggs

1 3/4 cups milk

1/2 cup melted butter

1 tsp vanilla extract

To Garnish:

Fresh chives or green onions, chopped

Additional Sriracha for drizzling (optional)

Instructions
 

Prepare the Chicken:

    - In a shallow bowl, combine flour, salt, pepper, garlic powder, and paprika.

      - In a separate bowl, whisk the egg.

        - Place breadcrumbs in another shallow bowl.

          - Dip each chicken tender in the flour mixture, then in the egg, and finally coat with breadcrumbs. Set aside.

            Fry the Chicken:

              - Heat oil in a deep frying pan over medium heat. Make sure it covers the bottom of the pan.

                - Once hot, fry the chicken tenders in batches until golden brown and cooked through, about 4-5 minutes on each side. Drain on paper towels and set aside.

                  Make the Sriracha Honey Sauce:

                    - In a small saucepan over medium heat, combine honey, Sriracha, soy sauce, rice vinegar, sesame oil, and minced garlic. Stir until well combined and heated through. Set aside.

                      Whip Up the Waffle Batter:

                          - In a separate bowl, mix eggs, milk, melted butter, and vanilla extract.
