Ingredients

For the Salad:

2 cups green leaf lettuce, chopped

1 cup red cabbage, shredded

1 cup carrots, julienned

1 cup cucumber, thinly sliced

1 cup bell peppers (red and yellow), julienned

1 cup cooked shrimp or tofu, sliced (optional)

½ cup fresh mint leaves, chopped

½ cup fresh cilantro leaves, chopped

¼ cup chopped peanuts (for garnish)

For the Peanut Dressing:

¼ cup creamy peanut butter

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon honey or agave syrup

1 tablespoon sesame oil

1 clove garlic, minced

1 teaspoon grated ginger

2-3 tablespoons water (to thin, as needed)

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the chopped lettuce, shredded red cabbage, julienned carrots, sliced cucumber, and bell peppers. Toss well to mix all the fresh ingredients together.

Add Proteins: If you’re using shrimp or tofu, add them to the mixed salad.

Make the Peanut Dressing: In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey (or agave syrup), sesame oil, minced garlic, and grated ginger. Gradually add water until you reach your desired consistency—smooth but pourable.

Combine Salad and Dressing: Drizzle the peanut dressing over the salad mixture. Toss gently to ensure everything is coated in the dressing.

Garnish and Serve: Transfer the salad to a serving platter or individual bowls. Sprinkle with chopped fresh mint, cilantro, and crushed peanuts for added flavor and crunch. Serve immediately, or chill in the refrigerator for about 10-15 minutes for a refreshing bite.
