12 oz (340g) pasta (fusilli or penne works best)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped (oil-packed for extra flavor)

4 cups fresh spinach, roughly chopped

1 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for an additional 2-3 minutes, allowing the flavors to meld.

        Incorporate Spinach: Add the chopped spinach to the skillet. Stir and cook for about 3-4 minutes until the spinach is wilted.

          Create the Sauce: Pour in the heavy cream and bring the mixture to a gentle simmer. Add the grated Parmesan cheese, and stir until melted and combined, forming a creamy sauce.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat it well with the sauce. If the mixture is too thick, gradually add reserved pasta water until you reach the desired consistency.
