2 cups fresh spinach, chopped

1 cup crumbled feta cheese

1/2 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

1/4 cup diced onion

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

Fresh cilantro, for garnish (optional)

Sour cream or Greek yogurt, for serving

Instructions
 

Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until soft. Stir in the minced garlic and red pepper flakes (if using) and cook for an additional minute, until fragrant.

    Add Spinach: Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste. Remove from heat and allow to cool slightly.

      Mix the Cheeses: In a mixing bowl, combine the cooked spinach mixture with crumbled feta and shredded mozzarella. Mix well until the cheeses are evenly distributed.

        Assemble Quesadillas: Heat a clean, non-stick skillet over medium heat. Place one tortilla in the skillet and spread a quarter of the spinach and cheese mixture on one half of the tortilla. Fold the other half over to cover the filling.

          Cook Quesadillas: Cook for 3-4 minutes until the bottom is golden brown and crispy. Carefully flip the quesadilla and cook for another 3-4 minutes on the other side until golden and the cheese is melted. Repeat with the remaining tortillas and filling.

            Slice and Serve: Remove the quesadillas from the skillet and let them sit for a minute before slicing into wedges. Garnish with fresh cilantro if desired. Serve with sour cream or Greek yogurt on the side.
