Spicy Tuna Sushi Bowls

1 cup sushi rice

1 ¼ cups water

2 tablespoons rice vinegar

1 tablespoon sugar

½ teaspoon salt

8 oz sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Japanese mayo)

1 tablespoon sriracha (adjust for spice preference)

1 teaspoon sesame oil

1 avocado, sliced

1 cucumber, thinly sliced

2 green onions, sliced

1 tablespoon soy sauce

1 teaspoon wasabi (optional)

1 tablespoon toasted sesame seeds

Nori sheets, cut into strips (for garnish)

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold running water until the water runs clear. Drain well. In a medium pot, combine the rinsed rice with 1 ¼ cups of water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit, covered, for another 10 minutes.

    Season the Rice: In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Uncover the rice and gently fold the vinegar mixture into the rice using a wooden spoon or spatula. Allow the rice to cool to room temperature.

      Make the Spicy Tuna: In a mixing bowl, combine the diced tuna, Japanese mayonnaise, sriracha, and sesame oil. Mix gently until the tuna is well coated. Adjust the sriracha based on your preferred level of spiciness.

        Assemble the Bowls: In four serving bowls, add a generous scoop of seasoned sushi rice as the base. Top each bowl with a portion of the spicy tuna mixture.

          Add the Fresh Ingredients: Arrange sliced avocado, cucumber, and green onions on top of the tuna. Drizzle about 1 teaspoon of soy sauce over each bowl, and if desired, add a small dollop of wasabi for an extra kick.

            Garnish and Serve: Sprinkle toasted sesame seeds over the top and add nori strips for garnish. Serve immediately and enjoy your delicious spicy tuna sushi bowls!
