200g soba noodles

2 tablespoons sesame oil

1 tablespoon vegetable oil

1 medium bell pepper, sliced (preferably red for color)

1 medium carrot, julienned

1 cup snap peas, trimmed

3 green onions, chopped (whites and greens separated)

3 cloves garlic, minced

1 inch ginger, grated

1 tablespoon soy sauce

1 tablespoon sriracha (adjust for heat preference)

1 tablespoon rice vinegar

1 teaspoon honey or maple syrup

1 tablespoon sesame seeds

Fresh cilantro, for garnish

Instructions
 

Cook the Soba Noodles: Begin by bringing a pot of salted water to a boil. Add the soba noodles and cook according to package instructions, typically about 4-5 minutes. Drain and rinse under cold water to stop the cooking process. Toss the noodles lightly with a teaspoon of sesame oil to prevent sticking. Set aside.

    Prepare the Stir Fry: In a large skillet or wok, heat the vegetable oil and 1 tablespoon of sesame oil over medium-high heat. Once hot, add the sliced bell pepper and carrot, stir-frying for about 2-3 minutes until they start to soften.

      Add the Vegetables and Aromatics: Add the snap peas and the white parts of the green onions to the skillet. Stir-fry for an additional 2 minutes. Then, add the minced garlic and grated ginger, cooking for another 30 seconds until fragrant.

        Combine with Noodles: Reduce the heat to medium and add the cooked soba noodles to the skillet. Pour in the soy sauce, sriracha, rice vinegar, and honey or maple syrup. Toss everything together gently until all ingredients are well combined and heated through, about 2-3 minutes.

          Serve and Garnish: Remove the skillet from heat. Sprinkle sesame seeds and the green parts of the chopped green onions over the stir fry. Garnish with fresh cilantro before serving.
