Spicy Sausage & Apple Skillet Stuffing

1 lb spicy Italian sausage, casings removed

1 medium onion, diced

2 cloves garlic, minced

3 celery stalks, diced

2 cups bread cubes (preferably sourdough or whole wheat)

1 large apple, cored and diced (preferably a tart variety like Granny Smith)

1 cup low-sodium chicken broth

1 tsp dried sage

1 tsp dried thyme

½ tsp cinnamon

¼ tsp cayenne pepper (adjust to taste)

¼ cup fresh parsley, chopped

Salt and pepper to taste

2 tbsp olive oil

Optional: ½ cup chopped walnuts or pecans for added crunch

Instructions
 

Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the spicy Italian sausage, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes. Using a slotted spoon, remove the sausage and set aside, leaving the drippings in the skillet.

    Sauté Vegetables: In the same skillet, add another tablespoon of olive oil if needed. Add the diced onion, garlic, and celery, stirring frequently until softened, about 3-4 minutes.

      Add Apple and Seasonings: Stir in the diced apple and cook for an additional 3-5 minutes, allowing the apples to soften slightly. Add the dried sage, thyme, cinnamon, cayenne pepper, salt, and pepper. Mix well to combine.

        Combine with Bread Cubes: Lower the heat and add the bread cubes to the skillet. Toss gently to combine with the sausage and vegetable mixture.

          Moisten with Broth: Pour the chicken broth over the stuffing mixture, and stir until everything is evenly moistened. Adjust with additional broth if needed, depending on how moist you prefer your stuffing.

            Bake (optional): If desired, transfer the mixture to a greased baking dish, sprinkle with chopped walnuts or pecans, and bake in a preheated oven at 350°F (175°C) for about 20-25 minutes, until the top is golden and crispy.
