Ingredients
  

2 cups fresh blueberries

1/2 cup granulated sugar (adjust based on sweetness preference)

1 cup coconut water (or water)

1 tablespoon fresh lime juice

1-2 teaspoons of chili powder (adjust to taste)

1/4 teaspoon salt

Optional: a few sprigs of fresh mint for garnish

Instructions
 

Rinse the blueberries under cold water and remove any stems.

    In a medium saucepan, combine the blueberries, sugar, coconut water, lime juice, chili powder, and salt.

      Cook over medium heat, stirring occasionally, until the blueberries have broken down and the mixture is bubbly (about 5-7 minutes).

        Remove the mixture from heat and let it cool for a few minutes.

          Carefully transfer the mixture to a blender and blend until smooth. If you prefer some texture, pulse it a few times instead of blending completely.

            Taste the mixture and adjust seasoning by adding more sugar or chili powder if desired.

              Pour the blueberry mixture into popsicle molds, leaving a little space at the top for expansion.

                Insert popsicle sticks and freeze for at least 4-6 hours, or until completely solid.

                  To release the popsicles, run warm water over the mold for a few seconds and gently pull the popsicles out.

                    Optional: Garnish with a sprig of fresh mint before serving for an extra pop of color and flavor.
