Ingredients

1 lb chicken breast, cut into bite-sized pieces

1/2 cup pure maple syrup

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1-2 teaspoons sriracha (adjust based on heat preference)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

2 tablespoons olive oil

2 green onions, chopped (for garnish)

Sesame seeds (for garnish, optional)

Instructions

Marinate the Chicken: In a mixing bowl, combine the maple syrup, soy sauce, apple cider vinegar, sriracha, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix well to combine. Add the chicken pieces to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 30 minutes, preferably 2 hours for enhanced flavor.

Preheat the Oven: Preheat your oven to 400°F (200°C) while the chicken is marinating.

Prepare for Baking: Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.

Cook the Chicken Bites: Remove the chicken from the marinade and arrange the pieces in a single layer on the prepared baking sheet. Drizzle the olive oil over the chicken bites. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and has a nice glaze, making sure to flip halfway through for even cooking.

Glaze the Chicken: For an extra sticky glaze, remove the chicken bites from the oven about 5 minutes before they are done. Brush them with leftover marinade mixed with a little extra maple syrup, then return them to the oven for the last 5 minutes.

Garnish and Serve: Once cooked, remove the chicken from the oven and let it rest for a couple of minutes. Garnish with chopped green onions and sesame seeds, if desired. Serve hot as an appetizer or over rice for a delightful main dish.
