Spicy Crispy Tofu Lettuce Wraps

Ingredients
  

1 block (14 oz) firm tofu, pressed and drained

1 tablespoon soy sauce

1 tablespoon sriracha (adjust for spice level)

1 teaspoon sesame oil

2 tablespoons cornstarch

1 tablespoon vegetable oil (for frying)

1 cup shredded carrots

1 cup chopped bell peppers (red and yellow for color)

1/2 cup chopped green onions

1 tablespoon fresh ginger, minced

1 garlic clove, minced

1 tablespoon rice vinegar

1 tablespoon hoisin sauce

1 teaspoon lime juice

Salt and pepper to taste

8 large lettuce leaves (e.g. Butter or Romaine)

Optional toppings: chopped cilantro, chopped peanuts, lime wedges

Instructions
 

Prepare the Tofu:

    - Cut the pressed tofu into bite-sized cubes. In a mixing bowl, toss the tofu cubes with soy sauce, sriracha, and sesame oil until well-coated.

      Coat the Tofu:

        - Sprinkle the cornstarch over the marinated tofu and toss gently to coat evenly. This will give the tofu a nice crispy texture when fried.

          Fry the Tofu:

            - Heat the vegetable oil in a large non-stick skillet over medium-high heat. Once the oil is hot, add the coated tofu cubes in a single layer. Fry for 5-7 minutes, turning occasionally until all sides are golden brown and crispy. Remove from the skillet and set aside on a paper towel to absorb excess oil.

              Create the Veggie Mix:

                - In the same skillet, add a splash more oil if necessary, then sauté the minced garlic and ginger over medium heat until fragrant (about 30 seconds). Add the shredded carrots and chopped bell peppers, stirring well. Cook for about 2-3 minutes until just softened but still crunchy.

                  Combine Ingredients:

                    - In a small bowl, whisk together rice vinegar, hoisin sauce, lime juice, salt, and pepper. Add this mixture to the skillet with the veggies, followed by the crispy tofu. Stir everything together and let it cook for another minute to warm through.

                      Assemble the Wraps:

                        - Lay the large lettuce leaves on a plate. Spoon equal amounts of the tofu and veggie mixture into each lettuce leaf.

                          Add Optional Toppings:

                            - Top each wrap with chopped cilantro, chopped peanuts for crunch, and a squeeze of lime juice for brightness.
