Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for desired spice level)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup buttermilk (or dairy-free alternative)

1 cup seasoned breadcrumbs (Panko works great)

1/2 cup hot sauce (like Frank's RedHot)

3 tablespoons unsalted butter, melted

Optional: Fresh cilantro or parsley for garnish

Instructions

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

Prepare the Cauliflower: In a large mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Mix well.

Mix Wet Ingredients: In another bowl, pour the buttermilk. If you're using a dairy-free alternative, ensure it's unsweetened.

Coat the Cauliflower: Dip each cauliflower floret into the buttermilk, making sure it’s well-coated, then dredge it in the seasoned flour mixture. Shake off any excess flour.

Breadcrumb Coating: After the flour coating, roll each floret in seasoned breadcrumbs, pressing gently to ensure the crumbs stick. Place the coated florets on the prepared baking sheet.

Bake: Spray the cauliflower lightly with cooking spray or drizzle a little oil over the florets. Bake in the preheated oven for 25-30 minutes, flipping halfway through until they turn golden and crispy.

Prepare the Buffalo Sauce: While the cauliflower bakes, mix the hot sauce and melted butter in a small bowl until well combined.

Toss in Sauce: Once the cauliflower is baked and crispy, remove it from the oven and quickly toss it in the buffalo sauce until evenly coated.

Final Bake: Return the sauced cauliflower to the baking sheet and bake for an additional 5-7 minutes to heat the sauce and create a glaze.

Serve: Remove from the oven, garnish with fresh cilantro or parsley if desired, and serve hot with your favorite dipping sauce, like ranch or blue cheese. Enjoy your spicy crispy buffalo cauliflower!
