Ingredients

2 packs of ramen noodles

1 can (400ml) coconut milk

2 cups vegetable or chicken broth

2 tablespoons red curry paste

1 tablespoon soy sauce

1 teaspoon ginger, grated

2 cloves garlic, minced

1 tablespoon brown sugar

1 cup mushrooms, sliced

1 cup baby spinach

1 red bell pepper, thinly sliced

1 carrot, julienned

1 tablespoon lime juice

Fresh cilantro and lime wedges for serving

Optional: Sliced chili for extra heat

Instructions

Cook the Ramen: Start by boiling a pot of water. Add the ramen noodles and cook according to package instructions (usually around 3-4 minutes). Drain and set aside.

Prepare the Broth: In a large pot over medium heat, add a splash of oil. Sauté the garlic and ginger for about 1 minute until fragrant.

Add the Spices: Stir in the red curry paste and cook for an additional minute, allowing the flavors to meld.

Create the Curry Base: Pour in the coconut milk and vegetable or chicken broth, stirring to combine. Add the soy sauce, brown sugar, and bring the mixture to a gentle simmer.

Incorporate Vegetables: Add the mushrooms, red bell pepper, and carrot to the broth. Cook for about 5-7 minutes until the vegetables are slightly tender.

Final Touches: Stir in the baby spinach and lime juice. Allow it to wilt for a minute. Taste and adjust seasoning as needed, adding sliced chili for extra spiciness if desired.

Combine with Noodles: Add the cooked ramen to the pot, gently tossing to coat the noodles in the spicy coconut broth.

Serve: Ladle the spicy coconut curry ramen into bowls. Garnish with fresh cilantro and serve with lime wedges on the side for an extra burst of flavor.
