Spicy Buffalo Chicken Mac and Cheese

2 cups elbow macaroni

2 cups cooked chicken, shredded (preferably rotisserie)

1 cup buffalo sauce (adjust for spice level)

4 tablespoons unsalted butter

1/4 cup all-purpose flour

4 cups whole milk

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/2 cup panko breadcrumbs

2 tablespoons olive oil

Fresh chopped parsley, for garnish (optional)

Instructions
 

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Cheese Sauce: In the same pot, melt the butter over medium heat. Once melted, sprinkle in the flour and whisk continuously for about 1-2 minutes until it forms a paste (roux).

      Add Milk: Gradually whisk in the whole milk, ensuring there are no lumps. Continue cooking for 5-7 minutes, stirring frequently until the mixture thickens.

        Cheese it Up: Reduce the heat to low and stir in the cheddar and mozzarella cheeses until melted and smooth. Season with garlic powder, onion powder, smoked paprika, salt, and pepper.

          Combine Chicken and Sauce: Stir in the shredded chicken and buffalo sauce until well mixed. Then, gently fold the cooked macaroni into the cheese sauce until thoroughly coated.

            Prepare for Baking: Preheat your oven to 350°F (175°C). Pour the mac and cheese mixture into a greased 9x13-inch baking dish.

              Make the Topping: In a small bowl, mix the panko breadcrumbs with olive oil. Sprinkle evenly over the mac and cheese for added crunch.
