Spiced Chickpea & Carrot Wraps with Yogurt Sauce

For the Wraps:

1 can (15 oz) chickpeas, rinsed and drained

2 large carrots, grated

1 red bell pepper, diced

1 small red onion, finely chopped

2 cloves garlic, minced

2 teaspoons ground cumin

1 teaspoon smoked paprika

1/2 teaspoon turmeric

1/2 teaspoon cayenne pepper (adjust for spice tolerance)

Salt and pepper, to taste

2 tablespoons olive oil

4 large whole wheat tortillas or wraps

1 cup fresh spinach or mixed greens

For the Yogurt Sauce:

1 cup plain Greek yogurt

1 tablespoon lemon juice

1 tablespoon tahini

1 clove garlic, minced

Salt and pepper, to taste

Fresh coriander or parsley, chopped (for garnish)

Prepare the Chickpea Mixture: In a large bowl, mash the drained chickpeas slightly with a fork—leave some whole for texture. Add the grated carrots, diced red bell pepper, chopped red onion, minced garlic, cumin, smoked paprika, turmeric, cayenne, olive oil, salt, and pepper. Mix well until all ingredients are evenly combined.

    Cook the Mixture: Heat a non-stick skillet over medium heat. Add the chickpea and vegetable mixture to the skillet and cook for about 5-7 minutes, stirring occasionally, until the onions become translucent and everything is heated through. Remove from heat.

      Make the Yogurt Sauce: In a small bowl, mix the Greek yogurt, lemon juice, tahini, minced garlic, salt, and pepper until smooth. Adjust seasoning to taste, adding more lemon juice or tahini if desired.

        Assemble the Wraps: Warm the whole wheat tortillas in a dry skillet or microwave for a few seconds to make them pliable. Lay down a generous handful of fresh spinach or mixed greens on each tortilla. Spoon a portion of the spiced chickpea and carrot mixture on top, then drizzle with the yogurt sauce.

          Wrap it Up: Fold the sides of the tortilla inwards and roll it up tightly from the bottom. Secure with parchment paper or a toothpick if needed.

            Serve: Cut the wraps in half and serve immediately. Optionally, garnish with fresh coriander or parsley on top.
