Ingredients

2 cups grated carrots

1/2 cup all-purpose flour

1/2 cup chickpea flour (besan)

1 tsp baking powder

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp smoked paprika

1/2 tsp chili powder (adjust to taste)

1/2 tsp salt

1/4 tsp black pepper

1/4 cup finely chopped fresh cilantro

1/4 cup finely chopped green onions

2 large eggs, beaten

1/4 cup milk (dairy or non-dairy)

3 tbsp olive oil (for frying)

Optional: yogurt or dipping sauce for serving

Instructions

Prep the Carrots: Start by peeling the carrots and grating them using a box grater or food processor. Place the grated carrots in a clean kitchen towel and squeeze out excess moisture to prevent soggy fritters.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, chickpea flour, baking powder, cumin, coriander, smoked paprika, chili powder, salt, and black pepper. Whisk together until evenly mixed.

Combine Wet Ingredients: In a separate bowl, whisk together the beaten eggs and milk until well combined.

Mix Everything Together: Add the grated carrots, chopped cilantro, and green onions to the dry mixture. Pour in the egg and milk mixture, then stir until just combined. Make sure not to overmix; it's okay if there are a few lumps.

Heat the Oil: In a large skillet, heat the olive oil over medium heat. You can test the oil by dropping a small amount of the batter into the pan; if it sizzles upon contact, the oil is ready.

Form the Fritters: Using a tablespoon or a small ice cream scoop, drop spoonfuls of the batter into the hot oil, flattening each one slightly with the back of the spoon. Leave space between each fritter for flipping.

Cook to Perfection: Cook the fritters for about 3-4 minutes on one side until golden brown, then carefully flip and cook for an additional 3-4 minutes on the other side. Adjust the heat as necessary to prevent burning.

Drain and Cool: Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.

Serve Warm: Enjoy the spiced carrot fritters warm with a dollop of yogurt or your favorite dipping sauce on the side.
