1 ½ teaspoons baking powder

½ teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

½ teaspoon salt

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

2 cups diced peeled apples (such as Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

½ cup brown sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper.

    Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt. Set aside.

      Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 2-3 minutes using a hand mixer or stand mixer.

        Add Eggs & Vanilla: Beat in the eggs, one at a time, mixing well after each addition. Add the vanilla extract and mix until well combined.

          Combine Dry and Wet Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, alternating with buttermilk. Begin and end with the flour mixture. Mix until just combined to avoid overmixing.

            Fold in Apples & Nuts: Gently fold in the diced apples and chopped nuts (if using) until evenly distributed throughout the batter.

              Prepare Topping: In a small bowl, mix the brown sugar and cinnamon together for the topping. Set aside.

                Pour Batter into Pan: Pour the batter into the prepared baking pan, spreading it evenly. Sprinkle the brown sugar and cinnamon mixture evenly on top.

                  Bake: Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

                    Cool: Allow the snack cake to cool in the pan for about 10-15 minutes, then transfer to a wire rack to cool completely.
