Spaghetti Squash with Turkey Bolognese

For the Spaghetti Squash:

1 medium spaghetti squash

1 tablespoon olive oil

Salt and pepper to taste

For the Turkey Bolognese:

1 pound ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 carrot, finely diced

1 celery stalk, finely diced

1 can (14 oz) crushed tomatoes

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Grated Parmesan cheese for serving (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Spaghetti Squash: Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside with olive oil and season with salt and pepper. Place both halves cut-side down on a baking sheet lined with parchment paper. Bake in the preheated oven for about 40-45 minutes, or until the flesh is tender and easily shredded with a fork.

      Make the Turkey Bolognese: While the spaghetti squash is roasting, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

        Add the Turkey: Push the vegetables to the side and add the ground turkey to the skillet. Cook for about 5-7 minutes, breaking it up with a spoon, until browned and cooked through. Stir in the minced garlic and cook for an additional minute until fragrant.

          Combine Ingredients: Stir in the crushed tomatoes, tomato paste, oregano, basil, red pepper flakes (if using), and season with salt and pepper. Bring the mixture to a simmer and cook on low heat for 20-25 minutes, allowing the flavors to meld together. Stir occasionally.

            Shred the Squash: Once the spaghetti squash is done roasting, remove it from the oven and let it cool for a few minutes. Use a fork to scrape the flesh and create spaghetti-like strands.

              Serve: Arrange a portion of the spaghetti squash on a plate, top with the turkey Bolognese sauce, and garnish with fresh basil or parsley. If desired, sprinkle with grated Parmesan cheese.
