For the Snickerdoodle Layer:

1 ½ cups all-purpose flour

1 tsp cream of tartar

½ tsp baking soda

¼ tsp salt

½ cup (1 stick) unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tsp vanilla extract

2 tsp ground cinnamon (for sprinkling)

For the Cobbler Topping:

1 ½ cups fresh sliced apples (Granny Smith or Honeycrisp work well)

¼ cup brown sugar

1 tsp ground cinnamon

1 tbsp lemon juice

1 cup buttermilk

½ cup sugar

2 cups all-purpose flour

1 tbsp baking powder

½ tsp salt

½ cup (1 stick) unsalted butter, melted

Optional:

Ice cream or whipped cream for serving

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Snickerdoodle Dough:

      - In a medium bowl, whisk together flour, cream of tartar, baking soda, and salt. Set aside.

        - In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.

          - Gradually mix in the dry ingredients until just combined. The dough will be thick.

            - Spread the Snickerdoodle layer evenly in the bottom of a greased 9x13-inch baking dish.

              Prepare the Apple Filling:

                - In a bowl, combine the sliced apples, brown sugar, ground cinnamon, and lemon juice. Toss well to coat.

                  - Layer the apple mixture evenly over the Snickerdoodle layer in the baking dish.

                    Make the Cobbler Topping:

                      - In a separate bowl, whisk together the buttermilk, sugar, flour, baking powder, and salt until smooth.

                        - Pour the melted butter into the batter and mix until combined.

                          - Carefully dollop the cobbler batter over the apples, covering them as much as possible. It’s okay if some apple peeks through!

                            Finish with Cinnamon Sugar:

                              - Sprinkle the remaining ground cinnamon evenly over the batter for a beautiful finish.

                                Bake:

                                  - Bake in the preheated oven for 40-45 minutes, or until the cobbler topping is golden and a toothpick inserted comes out clean.
