Ingredients

1 cup all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon (plus extra for topping)

1 cup whole milk

½ cup unsalted butter, melted

1 teaspoon vanilla extract

1 cup fresh peaches, diced (or your favorite fruit, like apples or berries)

1 tablespoon lemon juice

2 tablespoons brown sugar (for fruit mixture)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or non-stick spray.

Prepare the Fruit Mixture: In a medium bowl, combine the diced peaches, lemon juice, and brown sugar. Stir well to coat the fruit evenly. Set aside to let the flavors meld.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon until well combined.

Combine Wet Ingredients: In another bowl, mix the whole milk, melted butter, and vanilla extract until thoroughly combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

Layer the Cobbler: Pour the batter into the prepared baking dish. Gently spread the fruit mixture over the top of the batter. Do not mix; the fruit will sink as it bakes.

Cinnamon Sugar Topping: In a small bowl, mix together 2 tablespoons of sugar with 1 teaspoon of cinnamon. Sprinkle this mixture evenly over the fruit layer.

Bake: Place the cobbler in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool: Once baked, remove from oven and allow to cool for about 10-15 minutes before serving.

Serve: Serve warm, topped with a scoop of vanilla ice cream or whipped cream for an extra indulgent treat!
