Ingredients

For the Smothered Pork Chops:

4 bone-in pork chops (about 1 inch thick)

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon onion powder

2 tablespoons olive oil

1 medium onion, thinly sliced

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

1 teaspoon smoked paprika

Fresh parsley, chopped (for garnish)

For the Scalloped Potato Casserole:

4 large russet potatoes, peeled and thinly sliced

2 cups heavy cream

1 cup whole milk

2 cups shredded sharp cheddar cheese

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

1 garlic clove, minced

Salt and pepper, to taste

1/2 cup grated Parmesan cheese

2 tablespoons butter (for greasing the baking dish)

Instructions

Prepare the Scalloped Potatoes:

    - Preheat your oven to 375°F (190°C).

      - In a large bowl, combine the heavy cream, milk, thyme, garlic, salt, and pepper. Mix well.

        - Grease a large baking dish with butter. Layer half of the sliced potatoes in the dish, followed by half of the cheese mixture (half of the cheddar and half of the Parmesan).

          - Repeat with the remaining potatoes and cheese mixtures, finishing with a layer of cheese on top.

            - Pour the cream mixture over the layered potatoes, ensuring they are evenly coated.

              - Bake in the preheated oven for 45-50 minutes or until the potatoes are tender and the top is golden brown.

                Cook the Smothered Pork Chops:

                  - While the potatoes are baking, season the pork chops with salt, pepper, garlic powder, and onion powder.

                    - In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until golden brown. Remove chops from the skillet and set aside.

                      - In the same skillet, add the sliced onion and sauté until softened (about 3-4 minutes). Add the minced garlic and cook for another minute until fragrant.

                        - Pour in the chicken broth, stirring to deglaze the pan, scraping up any browned bits from the bottom. Reduce the heat to medium-low.

                          - Stir in the heavy cream, Worcestershire sauce, Dijon mustard, and smoked paprika. Let the sauce simmer for about 5 minutes, allowing it to thicken slightly.

                            - Return the seared pork chops to the skillet, spooning some sauce over them. Cover and simmer on low heat for an additional 10-15 minutes, or until the pork chops are cooked through and tender.

                              Serve:

                                - Once the scalloped potato casserole is ready, remove it from the oven and let it set for a few minutes.

                                  - Plate the scalloped potatoes alongside the smothered pork chops, drizzling extra sauce over the top if desired. Garnish with fresh parsley for a pop of color.
