2 large zucchinis, sliced into thin rounds

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 red onion, sliced into wedges

1 cup corn kernels (fresh or frozen)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

Salt and black pepper, to taste

8 small corn tortillas

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Grill: Preheat your grill to medium-high heat. If using a grill pan, ensure it is well-heated over medium-high heat on your stovetop.

    Marinate the Vegetables: In a large bowl, combine the zucchinis, bell peppers, red onion, and corn. Drizzle with olive oil, then sprinkle smoked paprika, cumin, garlic powder, salt, and black pepper over the veggies. Toss everything together until well coated.

      Grill the Vegetables: Place the marinated veggies on the grill (or grill pan) in a single layer. Grill for about 4-5 minutes on each side, or until they are slightly charred and tender. Remove them from the grill and set them aside.

        Warm the Tortillas: While the vegetables are grilling, wrap the corn tortillas in aluminum foil and place them on the grill for about 5 minutes to warm up. Alternatively, you can heat them in a dry skillet over medium heat for about 30 seconds on each side.
