1 cup stone-ground grits

4 cups chicken broth

1 cup whole milk

1 cup smoked Gouda cheese, shredded

½ cup Parmesan cheese, grated

6 slices of thick-cut bacon, chopped

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

½ teaspoon black pepper

3 large eggs, beaten

½ cup flat-leaf parsley, chopped (for garnish)

Prepare the Grits: In a large saucepan, bring the chicken broth to a boil. Slowly whisk in the stone-ground grits and reduce the heat to low. Cook, stirring frequently, until the grits are thick and creamy (about 20-25 minutes).

    Cook the Bacon: While the grits are cooking, in a skillet over medium heat, cook the chopped bacon until crispy. Using a slotted spoon, remove the bacon and drain on a paper towel-lined plate. In the same skillet, sauté the diced onion in the bacon fat until translucent (about 5 minutes), then add the minced garlic and cook for an additional minute.

      Combine the Mixtures: Once the grits are finished cooking, stir in the cooked bacon, sautéed onions, garlic, smoked Gouda, Parmesan cheese, smoked paprika, cayenne pepper, salt, and black pepper. Mix well until the cheeses have melted completely.

        Add Eggs: Let the grits mixture cool slightly, then stir in the beaten eggs until well combined.

          Bake the Dish: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with oil or butter. Pour the grits mixture into the prepared baking dish and spread it out evenly.

            Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the edges are set.
