2 large cucumbers

1 cup Greek yogurt (preferably full-fat)

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon smoked paprika

1 tablespoon lemon juice

1 tablespoon olive oil

Salt and black pepper, to taste

Cherry tomatoes, halved (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Cucumbers: Slice each cucumber in half lengthwise. Using a spoon, gently scoop out the seeds to create boat shapes, making sure not to pierce the skin. Set them aside.

    Make the Tzatziki Sauce: In a mixing bowl, combine the Greek yogurt, minced garlic, dill, smoked paprika, lemon juice, and olive oil. Stir until fully blended. Season with salt and black pepper to taste.

      Fill the Boats: Spoon the smoky tzatziki mixture evenly into each cucumber boat, filling them generously.

        Garnish: Top the filled cucumber boats with halved cherry tomatoes and a sprinkle of fresh parsley for a pop of color and extra flavor.
