Slow Cooker Stuffed Bell Peppers

4 large bell peppers (any color)

1 pound ground beef (or turkey/chicken for a lighter option)

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup diced tomatoes (canned or fresh)

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro or parsley (for garnish)

Instructions
 

Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottom slightly so they can stand upright without tipping over.

    Cook the Filling: In a large skillet over medium heat, add the ground beef and onion. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain excess fat if necessary.

      Combine Ingredients: In a large mixing bowl, combine the cooked beef mixture, cooked rice, black beans, corn, diced tomatoes, garlic, chili powder, cumin, smoked paprika, salt, and pepper. Mix until well combined.

        Stuff the Peppers: Carefully spoon the filling mixture into each bell pepper, packing it gently but firmly. Leave a little space at the top for the cheese.

          Set Up the Slow Cooker: Place the stuffed peppers upright in the slow cooker. If necessary, you can place them tightly together so they stay standing.

            Slow Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the peppers are tender and the filling is hot.

              Add Cheese: About 15 minutes before serving, sprinkle shredded cheese over the tops of the peppers. Cover again and allow the cheese to melt.

                Serve: Carefully remove the stuffed peppers from the slow cooker with a spatula. Garnish with chopped fresh cilantro or parsley before serving.
