4-5 lbs pork shoulder (also known as pork butt)

1 large onion, sliced

4 cloves garlic, minced

1 cup chicken broth

1 cup apple cider vinegar

1 cup barbecue sauce (store-bought or homemade)

2 tablespoons brown sugar

1 tablespoon smoked paprika

1 tablespoon chili powder

1 tablespoon cumin

1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional, for heat)

8 hamburger buns

Coleslaw (for topping, optional)

Pickles (for garnish, optional)

Instructions
 

Prepare the Pork Shoulder: Trim excess fat from the pork shoulder and cut it into large chunks to fit into your slow cooker.

    Make the Marinade: In a bowl, combine the brown sugar, smoked paprika, chili powder, cumin, salt, black pepper, and cayenne pepper. Rub this spice mixture all over the pork chunks, ensuring they are well-coated.

      Layer in the Slow Cooker: Place the sliced onion and minced garlic at the bottom of the slow cooker. Arrange the seasoned pork on top, followed by pouring in the chicken broth and apple cider vinegar. Drizzle half of the barbecue sauce over the pork.

        Slow Cook: Cover the slow cooker and set it to low. Cook for 8-10 hours or until the pork is fork-tender and easily shreds.

          Shred the Pork: Once cooked, carefully remove the pork from the slow cooker and place it on a cutting board. Use two forks to shred the meat. Return the shredded pork back to the slow cooker, mixing it with the juices and the remaining barbecue sauce.

            Serve: Toast the hamburger buns if desired. Pile the pulled pork onto the bottom half of each bun. Top with coleslaw and pickles, then place the top half of the bun on.
